Volpaia Tuscan Red Wine Vinegar


Produced in Chianti by Giovanella Stianti. Made in a working winery from the same grapes that are used in Chianti Classico, Sangiovese and Cannaiolo. The traditional ‘truciolo’ method is used, which gradually percolates red wine through oak shavings and vine shoots and allows the vinegar to retain aroma and pick up spice notes. After light filtration the vinegar is aged in wood barrels for about a year. The result is a vibrant and flavorful vinegar. Rich and full bodied but still bright.
