Located in the heart of appellation Coteaux du Vendomois, Jean Brazilier and his son Benoît represent the seventh generation of Braziliers to have worked vineyards in Thoré-la-Rochette. Together, they farm 25 hectares of vines, all biodynamically farmed. The Brazilier's family has been making Method Trad since the 1960s when his grandfather started making it. The cremant brut is half Chenin Blanc, lending acidity and minerality, and half Pineau d'Aunis, providing depth and fruit. Tank fermented and bottled for second fermentation early to maintain optimum freshness. Twenty months on its lees before disgorgement.
