The 2019 Cutter Cascadia ‘Heavy Water' Riesling is a skin contact wine by winemaker and Beast veteran, Michael Garofola. He works with vineyards primarily in the Columbia Gorge AVA, about an hour east of Portland to the Dalles, including parts of SW Washington. This is his second vintage working with the Hillside Vineyard, and his efforts and time in the vineyard are rewarded in the bottle. Once harvested, the Riesling was destemmed and left on its skins for 15 days and spent its time in neutral barrel after fermentation until bottled, unfined and unfiltered, in June of 2020. It is structured with racy acidity and a welcome touch of tannin, but soft and round, making it the perfect pairing for spicy Thai, pork, and seafood. It is a little shy so decanting or letting it breathe for 20-30 minutes will allow its true colors to shine.
