This vinegar is made from 85% Palomino and 15% Pedro Xim̩nez grapes and is aged for at least three years. Its intense, characteristic acetic aromas are reminiscent of aged Pedro Xim̩nez and Oloroso Sherries. The smooth, gratifying flavours include sweet hints with oak and Sherry highlights.
